Gellan gum is less dynamic sphingolipids single cell bacteria (Sphingomonaspaucimobilis) fermentation spores outside of an anionic polysaccharide , molecular weight of up to 5×10  . US FDA license in 1992, used in Food and beverage. Native gellan gum containing 46% glucose, 30% rhamnose, 21% glucuronic acid, 3% acetic acid and glycerides, acetyl and acyl glycerol typically connected at C2 and C6 position of the glucose residues.

Product use:

Gellan gum is very versatile, primarily as emulsifying agents, suspending agents, thickening agents, stabilizers, gelling agents, film formers and lubricants used in many fields of food, pharmaceutical, oil, chemicals and the like.
